Happy Father's Day!
This is Mark's favorite cake. It's a pistachio chocolate Bundt with a walnut, chocolate chip crunchy top and chocolate ganache drizzle. Remember? Cooking = love. Baking = true love. Being a Dad in this house is NOT a piece of cake. Mark has gotten us through thick and thin. I can't imagine a better Dad for our girls. Happy Father's Day to all the Dads out there. Including my own, up in Massachusetts.

We've had such a week of celebration around my place with my son's 18th birthday, his HS graduation and party last weekend, my daughter's 20th birthday today, that my husby has requested a low-key grill-out tomorrow: Montreal-seasoned tri-tip, baked sweet potatoes, local white corn, and my daughter's Costco birthday cake.

Now why didn't I think of that?? Never could make a cake bigger than 7" with GF flour as it sank in the middle, never thought of making a ring! Amazing and possibly worth crossing the ocean for. Looks like we're having an indor father's day a) weather grotty and b)F1 Grand Prix on this afternoon...
I love baking. It's like therapy. I used to bake several times a week. I used to weigh almost 20 pounds more than I do today! That's when we had an au pair and I plied her with treats to make sure she'd stayed in our crazy house. She stayed. I got fat. LOL!
The cake is not GFCF, I made a separate cake for the girls to enjoy - actually I always have GFCF treats in the freezer to pull out for just such occasions.
Namaste Foods makes the BEST cake mixes ever - GFCFSFCF. Kinnickinnick out of Canada also makes great cake mixes - And you can always make a GFCF brownie mix in a cake pan and frost a large, round brownie - the brownie mixes that are GF are always great.
Today is 9:00am Mass, breakfast, FAther's Day gifts, relax, and of course, The US Open golf tournament. I'll make dinner inside so Mark doesn't have to man the grill - I'm useless with the contraption.
Kim. we could be twins!! Baking has saved my sanity on more ocasions than I care to remember! The packet mixes here in UK are too full of rubbish to feed to my girls so I never use them. I have a wedding to go to 18th August...must find baking substitute!! (not gloating or anything but I'M GOING ON MY OWN!!)
Amanda, I can send you some Namaste if you'd like to try them. Their spice cake, if you add applesauce and/or zucchini becomes a healthy, fun and delivious dinner or breakfast muffin, er crumper, er sconey thing.

I made my husband Campbell's mushroom soup for supper. I love the man; I just hate cooking. Cooking does not = love in our household. Cooking = fire.
However, I did have my mom's gourmet chicken and steak fajitas at my parents' house in honour of my father's father's day. Yum.

Kim how come you have starbucks at that time in the morning? Is that US cliche of nipping out for coffee because you can't be arsed to make it really true?? Or do you have a starbucks man like we have a milk man?
Dear Stunned, I grind the little beans in a noisy contraption and brew a pot of Starbucks at 5:45am every day when I get up to make the kids lunches and breakfasts. No Maxwell House here - we need the strong stuff! A Starbucks man, now THAT's brilliant!
I think that's who my kids real father is - the Starbucks man!
We had a lame-o FD. Rainy and cold. Hubby got a card, he went out to get subs for lunch to bring home for us, while the boys had hot dogs, and then I made an overcooked chicken dinner. As with Cindy, cooking doesn't exactly equal love here. I
