GFCF Holiday Treats!

Reader Meredith asked for some Easter treat ideas for kids on special diets. My favorite place is The Chocolate Emporium in Cleveland, Ohio. They feature treats for all major holidays, with a specialty in Jewish holidays and events like bar/bat mitzvahs. Check out their EASTER CANDY!


Also, Meredith, here's a photo of a cake I made last year. I have a bunny pan from Williams Sonoma. It's just a GFCF cake with GFCF frosting - you can buy Cherrybrook Farms mix for both cake and frosting in most stores now. I like Namaste brand - one bag makes 2 layers.
Also, you can make your own bunny face cake. I thought I had a photo, but I can't find it. Make 2 8 or 9" layers - cut one into three pieces to make 2 ears and a bowtie. When you carve out the ears from the sides, the center looks like a bowtie. Voila! Easter treat! And this year I'm going to make an Italian egg bread using Bob's Red Mill GF mix. I figured out that if I let the dough rise in my bread machine, then I can put it into a freezer bag, cut off the tip and make braided bread, into which I'll insert hard boiled eggs. Brush on an egg wash and then sprinkle with naturally colored sugar sprinkles. I'll let you know how it turns out next month.

Oh my gosh! You are extraordinarily talented. And don't say you aren't!
I might be able to bake it and frost it... but to get it to stand up? Never. Mine would look like the poor little cottontails on the side of the road.

The PAN does the standing! :) Swear to God. Just put some frosting on the feet for glue.

I mostly ignore personal hygiene - have you SEEN my hair? ;)

Kim, you made my DAY! I love the bunny cake...And I think son would just about flip out seeing it- never mind me allowing him to EAT it. At most parties with the fabulous cakes, I provide him with some shitty looking alternative.. Off to pick up the pan! I dont think mine will look as pretty...But if it does come even close, I will send a pic along. THANKS again for all of the tips.

Kim, one question about the cherry brook frosting..Mine always comes out very mushy...not firm enough the pipe out decorations..What are you using as a margarine substitute?

I'm inspired...not to bake the cake, but to buy the candy...much easier. I will just have dreams about making the cake - I have enough trouble keeping up with the regular special diet stuff.
