Cooking, Cleaning! The fun nevers ends!! Look at the sea of Rice Chex Muddy Buddies! GFCF healthy treats! Recipe below.

This is what my counter looked like yesterday. I made a double batch of Muddy Buddies. There's a recipe on the back of the box of Rice Chex, which are now gluten free! They removed the barley malt from the cereal - and voila! I can buy a big old box on sale at Target for just $2.50! I doctor the recipe of course. It becomes healthier that way. Here you go:
9 cups Rice Chex
1/2 cup sunflower seed butter (box calls for peanut butter, but this way I can send them to school.)
1/4 cup coconut oil (box calls for butter, coconut oil is much healthier and casein free.)
1 cup (8 squares = 8 oz) unsweetened chocolate squares (box calls for chocolate chips. Too much sugar!)
Melt the sunflower seed butter, coconut oil and chocolate in the microwave or on the stove.
Here I add 1/4 cup ground flax seed to the melted mix. This adds fiber and omegas. The box does not call for such earthy crunchy Birkenstockish additionas.
Pour mix over the 9 cups of Chex and mix mix mix until thoroughly covered.
Take gallon size baggie. Pour in 1 cup powdered sugar (see, that's why I use unsweetened chocolate.) and 1 cup Bob's Red Mill unsweetened unsulphured coconut. Don't use that store stuff! Bob's is really dry - you need that. And it's chemical and sugar free. Mix sugar and coconut.
Add the coated Chex to the bag. Seal bag. Turn turn turn that bag to coat every side of every piece. Pour the Chex out onto sheets of wax paper to cool and dry. When cool store in freezer and/or fridge.

Really, these are GFCF??? I had no idea that bakers chocolate is CF? My DD has only been on the diet since Feb. I'm so excited to hear that we can make something with chocolate in it. THANK YOU!!!

Unsweetened... Not milk chocolate. And www.enjoylife.com just came out with a delish "milk chocolate" that is GFCFSF etc.... Made with rice milk. Check them out!

I've always wondered about the coconut oil. Isn't technically a nut product because coconuts are a tree product. Maybe your school is just peanut-free. On a birthday I sneak in the coconut whipped cream but I always feel a tad guilty even though I know that its mere presence will not send anyone into shock.

The Rice Chex still have BHT in them though so we can't use them. Wish they would take that crap out!!

I know - BHT is not allowed on Feingold - and we try to avoid such chemicals too. Believe me. I've let it slide on the Chex - it's the only chemical preservative in their diet. If I see problems? I'll have to say cheerio to the Chex!

We buy the Healthy Valley Rice Crunch-Ems (like Rice Chex) at Whole Foods which does not have BHT, but they are now almost $7 per box! It is getting ridiculous. Here's my question, if they don't have to use BHT why does Rice Chex? Wonder if we can write to the manufacturer of Rice Chex and ask them why the hell BHT has to be in there. It would be a lot cheaper to be able to buy the Rice Chex that's for sure.

I believe you can use tocopherols (vitamin E) as an alternative preservative. And that $7 box is half the size of the Rice Chex. With three kids to feed GFCF I simply can't afford it. I do buy Koala Krisp cereal for Bella from Amazon or when the Stop and Shop has 2 for $5.00. K
